Origin & Quality
Our El Salvador Santa Ana coffee comes from small family farms on the volcanic slopes of Santa Ana, one of El Salvador’s premier coffee-growing regions. This Strictly High Grown (SHG) coffee is cultivated above 1,200 meters where cooler temperatures slow cherry development, creating denser beans with more concentrated flavors.
Santa Ana’s fertile volcanic soil and ideal climate create perfect conditions for exceptional Arabica coffee. The farmers here grow traditional Bourbon and Pacas varieties, carefully hand-picking only ripe cherries. Every batch meets European Preparation (EP) standards with fewer than eight defects per 300 grams—a mark of meticulous quality control.
Growing Conditions
Higher elevations mean slower growth and smaller harvests, but the result is worth it. The challenges of mountain farming encourage higher standards and more careful attention to every step of production.
After harvest, the coffee undergoes traditional washed processing, where cherries are floated and sorted to ensure consistent ripeness. The seeds are removed from their skins using depulping machines and moved to fermentation tanks to remove the mucilage—the remaining fruit remnants. Afterward, the coffee is dried until it reaches optimal moisture levels. This method lets the true character of Santa Ana’s terroir shine through, allowing the growing conditions and the region’s unique qualities to take center stage.

In the cup, this washed El Salvador coffee delivers a smooth, well-balanced experience. Expect notes of cocoa, dried fruit, and nuttiness that create a comforting, approachable profile. Medium acidity keeps things bright and lively, while the rich body provides satisfying weight.
