Located in the Oromia region of southern Ethiopia and named after the Guji tribe of the Oromo people, this celebrated coffee-growing area produces some of the country’s most distinctive specialty coffee.
Most Guji farmers cultivate coffee on 1-2 hectare plots intercropped with food-producing agriculture, relying on traditional farming methods free from chemical fertilizers and artificial inputs. This coffee meets high standards for physical attributes and cup profile, assessed for aroma, flavor, acidity, and body.
Growing Conditions
Guji’s exceptional microclimate is characterized by high elevations, abundant rainfall, cool temperatures, and rich volcanic soils. The region experiences distinct wet and dry seasons, with ample moisture supporting lush vegetation and healthy coffee trees. Cool, misty mornings and sunny afternoons allow coffee cherries to mature slowly, enhancing their natural sweetness and complexity. Dense forests and varied terrain create diverse microclimates within Guji, resulting in coffees with unique and expressive flavor profiles.
Coffee cherries are hand-harvested at peak ripeness and dried whole using the natural process—a traditional Ethiopian method requiring minimal infrastructure. Cherries are spread on raised beds or patios in the sun, allowing controlled fermentation as they dry. After reaching optimal moisture levels, the dried fruit is hulled away, revealing beans with intensely sweet, fruit-forward characteristics that natural processing is known for.
Flavor Profile
In the cup, this naturally processed Guji coffee bursts with brightness and complexity. Lighter roasts showcase delicate berry sweetness, jasmine-like florals, and elegant black tea notes—a hallmark of Ethiopia’s finest coffees. As the roast deepens, expect the berry notes to evolve from bright blueberry to richer dark cherry, while floral aromatics give way to chocolate undertones and lingering sweetness.
