Origin & Quality
Our Mexican coffee comes from small family farms in the highlands of Chiapas, where generations of farmers have cultivated exceptional coffee using traditional methods. Most farms here are modest plots under 10 acres, where careful attention to harvest and processing creates consistently high quality beans. These farmers grow Bourbon, Caturra, Mundo Novo, and Typica varieties at elevations between 900-1,000 meters.
After hand picking, the coffee undergoes full washed processing to highlight its clean, balanced profile. The attention to detail throughout harvest and post processing ensures a smooth, approachable cup that works beautifully as an everyday brew while offering enough character to keep things interesting.
Growing Conditions
Chiapas sits in southern Mexico where mountain ranges create ideal altitude and climate for specialty coffee production. The region’s combination of elevation, rainfall, and temperature allows coffee to develop balanced sweetness and gentle acidity. After processing, the coffee is sun dried on patios when weather permits, and finished in mechanical dryers called guardiolas when needed to maintain optimal moisture levels.
The fully washed process creates clarity in the cup, allowing the true character of Chiapas terroir to shine through. This method produces a clean finish with natural fruitiness no added flavoring, just the honest expression of origin, bean, and roast.
Flavor Profile
In the cup, expect a smooth, medium-bodied coffee with balanced sweetness and gentle acidity. Notes of orange, milk chocolate, and brown sugar create a comforting profile that’s familiar yet nuanced. This coffee delivers warm, approachable flavors with a clean finish and a touch of natural fruitiness that adds brightness without overwhelming the palate.
