Origin & Quality
Our Brazilian coffee comes from smallholder farms in Mata de Minas, a sub-region of Minas Gerais that produces more coffee than any other region in the world—around 30 million bags annually. Despite Brazil’s reputation for massive plantations, most farms here are modest by Brazilian standards, with 80% smaller than 20 hectares. These family farms cultivate traditional varieties including Catucai, Catuai Red and Yellow, and Yellow Bourbon.

This coffee is sourced through Volcafe Santos, working directly with local farmers who take pride in their craft. The combination of careful cultivation, strategic processing, and ideal growing conditions results in a clean, sweet cup that showcases what modern Brazilian coffee can achieve.

Growing Conditions
Mata de Minas offers a unique microclimate—warm and humid with significant elevation variation. Coffee grows at approximately 1,200 meters above sea level, where temperature swings and diverse terrain create distinct growing conditions. The region’s natural characteristics encourage farmers to focus on quality over quantity.

This coffee undergoes pulped natural processing, known locally as cereja descascado. After harvest between July and September, ripe cherries are sorted and partially de-pulped, retaining a thin layer of mucilage around the bean. The coffee is then dried to optimal moisture levels and allowed to rest, stabilizing both flavor and quality. This method—a Brazilian innovation that gained commercial traction after market deregulation in 1990—creates a unique cup profile that bridges the gap between fully washed and natural processed coffees.
